- When a tree is baked in the charcoal kiln, the extract of the tree evaporated and is discharged with the smoke. When it is cooled, it forms into a liquid shape, but if it is refined for more than six months, it appears into three layers: the light-oil layer (15-20%), the carbonized extract layer (20%) and the tar layer (20-30%). Mokcheok is the light brown, transparent, middle layer.
- Mokchoek contains acetic acid and several organic acids. Nutrition in the body of the organism transformed into citric acid other acid substances to produce calories. In this multiple biochemical process, it also produces the energy integrating precious enzyme and vitamin.
